Medicinal use:One of its most traditional uses typical of times of scarcity was “dandelion coffee”, for which the roots were used, collected in autumn, allowed to dry, chopped and roasted and hot water was passed through them obtaining from this way a coffee substitute. Its fresh leaves, preferably harvested before flowering, in salads and stewing as a vegetable. In many towns of the Valencian community they are part of the filling of some traditional empanadas
