Medicinal use:Galangal is widely used as a spice in different Asian cuisines such as Thai, Indonesian and Vietnamese cuisine. In these kitchens it is usually used to provide its characteristic flavor and aroma to all kinds of soups, sauces and broths. It is well known in Asian cuisines and, although today it is hardly used in European kitchens, in the Middle Ages it was widely used as a spice in different recipes.
