Medicinal use: It offers a very particular flavor, sweet, spicy, very aromatic and intense, it is ideal to enhance other flavors and it is spectacular how it cleanses the palate, an example of this is the gari or pickled ginger with which they accompany the sushi for the moment in which you’re going to change flavor. It can be used in both sweet and salty preparations, fresh, powdered or candied. The fresh root is better if it is young, it is peeled at the time of consumption since later during cooking it loses part of its spicy flavor.
